*Spelt is an ancient grain that is today a popular grain and flour in Germany, favored for its organic health benefits, taste, and its lower levels of gluten for people allergic to wheat. In recipes spelt flour calls for less water than wheat flour because it is more soluble. Spelt was also made popular in Europe by the writings of Hildegard von Bingen (ca. 1098-1179, "Hildegard-Medizin"). The German town of Dinkelsbühl takes its name from the grain's German name. Dinkel was cultivated in the U.S. by Swiss settlers in the 1890s. - Web: Dinkelbrot - Rezept (Marions Kochbuch) - English: Spelt Grain Bread recipe.
